  • 2 cups cherries, halved and pitted
  • 1 1/3 cups granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter, melted
  • 1/3 cup canola oil
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and spread the halved cherries on top. Sprinkle with sugar and roast for about 10 minutes until softened. Let cool.
  2. Lower the oven temperature to 325°F (160°C) and prepare an 8×8 pan with non-stick spray and parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt.
  4. In another bowl, beat sugar, eggs, and egg yolk on high speed for about five minutes until fluffy. Add melted butter, oil, and vanilla extract; mix until combined.
  5. Gently fold the dry ingredients into the wet mixture along with half of the roasted cherries and chocolate chips until just combined.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 40-50 minutes until edges are set but center is slightly underbaked.
  7. Let cool completely in the pan before slicing.
