  • 89 medium starchy potatoes, thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded Gruyère or mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic in foil with olive oil and salt for about 30 minutes until soft.
  3. Grease a baking dish with butter.
  4. Thinly slice the potatoes using a mandoline slicer.
  5. Layer the potato slices in the greased baking dish.
  6. In a saucepan, combine cream, milk, butter, half parmesan, thyme, nutmeg, salt, and pepper; heat until combined.
  7. Squeeze roasted garlic into a bowl and mash into a paste; stir into the cream mixture.
  8. Pour the creamy mixture over the layered potatoes and cover with foil.
  9. Bake covered for about 40 minutes; then add cheese on top and bake uncovered for another 30 minutes until golden brown.
