1 cup granulated sugar (for caramel)
6 tbsp salted butter, cubed
1/2 cup + 1 tbsp heavy cream
Pinch of flaky sea salt
1/2 cup granulated sugar (for crumble)

Instructions
Prepare the cookie dough by creaming softened butter and sugars until fluffy. Mix in vanilla and eggs, then incorporate dry ingredients. Chill for 30 minutes.
For the apple filling, cook diced apples with butter, brown sugar, and spices until tender. Set aside to cool.
Make the salted caramel sauce by melting sugar until golden, then adding butter and cream. Cool until thickened.
Scoop chilled dough into balls and chill for at least four hours.
Bake at 365°F for 10-12 minutes until edges are set; let cool slightly.
Assemble by filling cookies with apple mixture, topping with crumbles and drizzling caramel.
