  • 2 cups medjool dates (pitted)
  • 1 cup unsweetened shredded coconut (divided)
  • 2 tablespoons chocolate chips or dark chocolate pieces (divided)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon almond butter (optional)

Instructions

  1. Preheat your oven to 400°F and toast the shredded coconut on a baking sheet for about 5-10 minutes until golden brown.
  2. In a food processor, combine pitted dates, almond butter (if using), two-thirds of the toasted coconut, one tablespoon of chocolate chips, sea salt, and vanilla extract. Pulse until a dough forms.
  3. Mix in the remaining chocolate chips and roll the mixture into approximately 16 balls.
  4. Roll each ball in the remaining toasted coconut to coat fully.
  5. Store in an airtight container in the fridge for up to two weeks or freeze for up to three months.
