  • 2 acorn squash
  • ½ pound ground turkey sausage
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • Fresh herbs (thyme, sage, rosemary)
  • Salt and pepper to taste
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F. Cut acorn squash in half and scoop out seeds.
  2. Place squash cut side down on a lined baking sheet. Bake for about 20 minutes until fork-tender.
  3. In a skillet over medium heat, cook ground turkey sausage until fully cooked; set aside.
  4. In the same skillet, heat olive oil and sauté onions until softened. Add kale, garlic, celery, apples, herbs, salt, and pepper; cook until veggies are tender.
  5. Scoop some flesh from baked squash into the mixture; combine well.
  6. Stuff each squash half with the filling and return to oven for another 15 minutes.
  7. Top with feta cheese and nuts; bake for an additional 5 minutes before serving.
