  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup diced tomatoes
  • Fresh basil for garnish

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper until well combined. Form into meatballs about 1 inch in diameter.
  2. Heat olive oil in a large pot over medium heat. Brown meatballs in batches for about 5 minutes until golden on all sides; set aside.
  3. In the same pot, sauté chopped onion until translucent (about 3–4 minutes).
  4. Add chicken broth and bring to a boil; reduce heat and return meatballs to the pot. Simmer for about 15 minutes.
  5. Stir in heavy cream and fresh spinach; cook until spinach is wilted (about 2 minutes).
  6. Serve hot garnished with fresh basil.
