  • 1 jalapeño, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box corn muffin mix (8.5 ounces)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, combine grated zucchini, onion, jalapeño, corn kernels, half of the cheddar cheese, eggs, garlic powder, cumin, salt, and black pepper. Mix well.
