  • 1 sheet puff pastry, thawed
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 10 oz cremini mushrooms, sliced
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 2 large eggs, divided
  • Fresh thyme leaves (or dried)
  • Salt and black pepper, to taste
  • 1/4 cup dry white apple vinegar (optional)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a skillet, heat olive oil and butter over medium heat; sauté onions until soft.
  3. Add garlic and mushrooms; cook until browned and moisture evaporates.
  4. Season with thyme, salt, and pepper; if using apple vinegar, add it now.
  5. Stir in cream cheese and cheeses until creamy; remove from heat.
  6. Mix in one beaten egg to bind the filling.
  7. Roll out puff pastry and cut diagonal strips along the sides; leave the center for filling.
  8. Fill the center with the mushroom mixture; braid the strips over the top.
  9. Transfer to a baking tray lined with parchment paper and brush with remaining beaten egg.
  10. Bake for 20–22 minutes until golden brown; let cool before slicing.
