  • 2 ripe avocados, diced
  • 2 ripe mangoes, diced
  • ¼ red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • Juice of 23 limes
  • ½ to 1 jalapeño, seeded and minced (optional)
  • 23 cups cooked rice or quinoa
  • 2 tablespoons olive oil (for cooking shrimp)
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (for dressing)
  • 1 tablespoon lime juice (for dressing)
  • ½ teaspoon honey or maple syrup (optional, for dressing)
  • Optional toppings: sesame seeds, red pepper flakes, chopped green onions, tortilla strips or crispy wonton strips

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season shrimp with chili powder, cumin, garlic powder, salt, and pepper. Cook shrimp for 2-3 minutes per side until pink and opaque.
  2. In a bowl, combine diced mangoes, avocados, red onion, cilantro, lime juice, and jalapeño (if using). Gently mix to combine.
  3. Assemble bowls starting with a base of rice or quinoa. Top with the mango salsa mixture and sautéed shrimp.
  4. Add optional toppings like sesame seeds or tortilla strips before serving.
