  • 1 tablespoon pumpkin pie spice

  • 8 Tbs butter (room temperature)
  • 1 cup brown sugar (packed)
  • 1/4 cup molasses
  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper.
  3. Cream butter, brown sugar, molasses, and pumpkin puree in a mixer until smooth.
  4. Add the egg and mix until combined.
  5. Gradually incorporate the dry ingredients until just combined; do not overmix.
  6. Chill the dough for at least 30 minutes.
  7. Roll chilled dough into balls, coat in sugar, and place on baking sheets.
  8. Flatten slightly and bake for 12-14 minutes until set but soft.
  9. Cool on sheets for five minutes before transferring to racks.
