  • 1 tablespoon neutral oil
  • 1 tablespoon Thai red curry paste
  • 1 cup chicken or vegetable stock
  • 1/3 cup coconut milk
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar
  • 2 kaffir lime leaves
  • Fresh Thai basil leaves

Instructions

  1. In a pot, heat the neutral oil over medium-high heat. Add the Thai red curry paste and sauté for 1-2 minutes until fragrant.
  2. Pour in the chicken or vegetable stock and stir until the curry paste is dissolved.
  3. Add coconut milk, soy sauce, sugar, and kaffir lime leaves. Mix well, then bring to a gentle simmer.
