  • 1 garlic clove, minced
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (8.5 oz) box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef. Add diced onion and minced garlic until fragrant.
  3. Stir in corn, black beans, diced tomatoes, chili powder, cumin, paprika, and salt. Simmer for 5-7 minutes.
  4. In a separate bowl, mix corn muffin mix with an egg and milk until just combined.
  5. Pour the beef mixture into a greased baking dish and top with cornbread batter.
  6. Bake for 25-30 minutes until golden brown; add shredded cheese on top and bake for an additional 3-5 minutes.
