  • Olive oil
  • 1 medium white onion
  • 2 garlic cloves
  • 500g ground beef
  • 1 tablespoon tomato puree
  • 80ml apple vinegar
  • 500g tomato passata
  • 240ml beef stock
  • ½ bunch fresh basil, chopped
  • ½ teaspoon dried oregano
  • ½ teaspoon sugar
  • 20g freshly grated parmesan
  • 200g spaghetti
  • 6 crusty white rolls
  • 100g butter, melted
  • 30g parmesan for butter
  • 1 tablespoon fresh parsley, finely chopped
  • 3 garlic cloves, made into paste
  • 200g mozzarella, shredded

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion; cook until golden brown, then stir in minced garlic.
  2. Add ground beef, breaking it apart as it browns. Mix in tomato puree.
  3. Pour in apple vinegar and reduce slightly. Add tomato passata, beef stock, and herbs; simmer for 25 minutes.
  4. Hollow out the tops of the rolls to create bowls.
  5. Mix melted butter with garlic paste, parsley, and parmesan; brush inside and outside of rolls.
  6. Cook spaghetti until al dente; toss into sauce mixture.
  7. Fill bread bowls with spaghetti mixture and top with shredded mozzarella.
  8. Bake at 350°F (175°C) for 8–10 minutes until golden.
