  • 8 mini or Persian cucumbers
  • 1 green onion (sliced)
  • 1 ½ tbsp low-sodium soy sauce
  • 1 ½ tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves (minced)
  • 1 tsp red chili flakes

Instructions

  1. Wash and dry the cucumbers. Trim the ends and cut them diagonally into accordion-style slices or thinly slice them on a mandolin.
  2. In a small bowl, whisk together soy sauce, vinegar, sesame oil, honey or maple syrup, minced garlic, and chili flakes.
  3. Pour the dressing over the cucumbers in a large mixing bowl and toss gently to combine. Garnish with sliced green onions and sesame seeds before serving.
