  • 1 tablespoon fresh oregano (or basil)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple vinegar (or apple cider vinegar)
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (optional, for heat)
  • 2 large sweet potatoes, peeled and cut into chunks
  • 1/4 cup unsalted butter (or olive oil for dairy-free)
  • 1/2 cup heavy cream or coconut milk (or coconut milk for a dairy-free option)
  • 1/4 teaspoon cinnamon (optional, for extra flavor)

Instructions

  1. Boil water in a large pot, add peeled sweet potato chunks, and cook until tender (about 15 minutes).
  2. In a blender, combine parsley, cilantro, lemon juice, olive oil, apple vinegar, minced garlic, chili flakes (if desired), salt, and pepper; blend until smooth.
  3. Heat olive oil in a skillet over medium-high heat. Season steaks with salt, pepper, and garlic powder. Cook for 4-5 minutes per side for medium-rare.
  4. Drain sweet potatoes and return them to the pot. Add butter (or olive oil), cream (or coconut milk), salt, pepper, and cinnamon; mash until smooth.
