  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 4 ears of corn
  • 2 tbsp butter
  • 1/4 cup mayonnaise (or plant-based alternative)
  • 1/4 cup sour cream (or plant-based alternative)
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp chili powder (optional)
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 avocado, diced
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. Prepare the chicken by mixing cubed chicken with olive oil and spices.
  2. Cook the chicken in a skillet over medium-high heat until golden brown.
  3. Cook corn by grilling, boiling, or roasting until tender; cut off kernels.
  4. Mix corn with mayonnaise (or substitute), sour cream (or substitute), cilantro, lime juice, and optional chili powder.
  5. Rinse rice; combine with water and salt in a saucepan. Bring to boil until cooked through.
  6. Assemble bowls with rice at the base topped with chicken, street corn mixture, black beans, and diced avocado.
