  • 4 medium sweet potatoes
  • 2 balls of burrata cheese (about 6 oz each)
  • 1/2 cup toasted walnuts, roughly chopped
  • 1/2 cup fresh sage leaves
  • 1/4 cup olive oil
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes and poke them with a fork several times. Rub with olive oil and sprinkle with salt. Bake for about 45 minutes or until soft.
  2. While baking, prepare the sage pesto by blending fresh sage leaves, toasted walnuts, garlic, lemon juice, olive oil, salt, and pepper until smooth.
  3. Once sweet potatoes are cool enough to handle, slice open lengthwise and gently mash some flesh inside. Fill with burrata cheese and top with toasted walnuts.
  4. Drizzle sage pesto over the stuffed sweet potatoes and serve.
