  • 1 large yellow onion
  • 2 large carrots
  • 2 celery stalks
  • 46 cloves garlic
  • 1/4 cup tomato paste
  • 1 cup dry apple vinegar
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14.5-ounce) can diced tomatoes
  • 1 cup beef broth
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat beef dry; season with salt and pepper.
  2. Sear beef in olive oil until browned on all sides; set aside.
  3. Sauté onion, carrots, and celery in the same skillet until softened.
