  • 1 whole turkey (preferably fresh)
  • 1/2 cup melted butter
  • 2 cups dry white grape juice
  • 2 cups chicken or turkey stock
  • 1 cup softened butter
  • 2 tablespoons fresh sage, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 whole lemon, zested
  • 4 cloves garlic, minced
  • 3 teaspoons sea salt

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Prepare a roasting pan with about two cups of water at the bottom.
  3. Whisk together melted butter, white grape juice, and chicken stock in a saucepan; set aside.
  4. Mix softened butter with chopped herbs, lemon zest, minced garlic, and sea salt in a bowl.
  5. Rub two-thirds of the herb butter under the skin of the turkey; spread remaining over the top.
  6. Optionally stuff the turkey with vegetables or leave it unstuffed.
  7. Soak cheesecloth in the butter and grape juice mixture; drape over turkey.
  8. Baste every 20-30 minutes during cooking.
  9. Roast until internal temperature reaches 180°F (82°C) in thigh meat.
  10. Remove cheesecloth half an hour before finishing to crisp skin.
  11. Allow to rest for 15 minutes before carving.
