  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup melted butter
  • 1 cup brown sugar
  • 23 teaspoons salt (or to taste)
  • ½ cup heavy cream (or milk)
  • ½ cup flour
  • ⅓ cup melted butter (for topping)
  • 1 cup chopped pecans
  • 34 cups mini vegan marshmallows

Instructions

  1. Cook the sweet potatoes in boiling water until tender. Drain and mash until desired texture.
  2. Preheat the oven to 375°F (190°C). In a large bowl, combine mashed sweet potatoes with eggs, vanilla extract, melted butter, brown sugar, salt, and heavy cream. Mix until combined.
