  • 1 Tablespoon sesame oil
  • ¼ cup onion (diced)
  • 2 cloves of garlic
  • 1 tablespoon fresh minced ginger
  • 10 oz ground chicken
  • ¼ cup Tamari (or soy sauce, coconut aminos)
  • 2 Tablespoons Thai sweet red chili sauce
  • juice of 1 lime
  • 1 teaspoon maple syrup (or honey, agave)
  • ⅓ cup cashews (chopped)
  • ¼ cup scallions (chopped)
  • ¼ cup cilantro (fresh, chopped)
  • ¼½ cup carrots (shredded)
  • Sesame seeds for topping
  • 1 head butter lettuce – leaves removed

Instructions

  1. Heat sesame oil in a pan over medium-high heat. Sauté diced onions until translucent.
  2. Add minced garlic and ginger; cook for 2 minutes until fragrant.
  3. Stir in ground chicken, season with salt and pepper, and cook until browned (3-4 minutes).
  4. In a bowl, whisk together Tamari, Thai sweet red chili sauce, lime juice, and maple syrup.
  5. Pour the sauce over the cooked chicken mixture along with chopped cashews; stir to combine.
  6. Remove from heat and mix in shredded carrots, scallions, and cilantro.
  7. Fill butter lettuce leaves with the chicken mixture, drizzle with extra sauce if desired, and sprinkle sesame seeds on top.
