  • 500 g butternut squash (peeled and cubed)
  • 4 cloves garlic (peeled)
  • 1 yellow onion (finely sliced)
  • 2 tbsp olive oil
  • 500 g shelf-stable gnocchi
  • 50 g grated parmesan
  • Juice of 1 lemon
  • 30 g walnuts (chopped)
  • 75 ml milk
  • 50 g turkey strips (chopped)
  • 1 ball of fresh mozzarella (torn into pieces)

Instructions

  1. Preheat your oven to 180ºC.
  2. On a baking tray, combine butternut squash, onion, garlic, rosemary, and olive oil; toss well.
  3. Roast for about 30 minutes until tender and golden.
  4. Blend roasted vegetables into a smooth purée, adding water if needed.
  5. In a frying pan with olive oil, cook turkey strips until crispy.
  6. Stir butternut squash purée with water and milk in the pan; add gnocchi and simmer for 8-10 minutes.
  7. Mix in parmesan and lemon juice; fold in half the turkey strips.
  8. Top with mozzarella pieces and grill for about five minutes until melted.
  9. Garnish with remaining turkey strips, walnuts, and black pepper before serving.
