  • 1 ½ pounds ground turkey
  • 1 cup fresh breadcrumbs
  • ½ cup finely minced onion
  • 4 garlic cloves
  • 1 tablespoon chopped sage
  • 15 oz can organic pumpkin puree
  • 1 ¾ cups chicken stock
  • ½ cup grated parmesan cheese
  • ¼ cup heavy cream
  • 3 tablespoons milk
  • 1 tablespoon chopped parsley
  • 1 ½ teaspoons Italian seasoning
  • 1 large whole egg plus 1 yolk
  • 1 ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons ghee or unsalted butter
  • 1 tablespoon olive oil
  • 2 tablespoons maple syrup

Instructions

  1. In a bowl, combine breadcrumbs and milk; let soak for 2-3 minutes. Mix in onion, garlic, sage, seasoning, parmesan, eggs, turkey, salt, and pepper until just combined.
  2. Form into meatballs (about two tablespoons each) and freeze for 20-25 minutes.
  3. Sear meatballs in oil over medium-high heat until golden brown and cooked through (internal temp of 165°F). Set aside.
  4. In the same skillet, melt ghee and sauté onions until softened; add garlic and Italian seasoning.
  5. Stir in pumpkin puree and chicken stock; simmer for a few minutes. Add cream, parmesan, maple syrup, and herbs.
  6. Return meatballs to the sauce to warm through before serving.
