3 large red apples
1 3/4 cups apple juice
2 tablespoons apple cider vinegar
1/2 cup brown sugar
1 teaspoon vanilla bean paste (or extract)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon salt
Instructions
Core and chop the apples into large chunks. Combine them with apple juice and apple cider vinegar in a pot. Bring to a boil, then reduce heat and simmer covered for about 30 minutes until soft.
Stir in brown sugar, vanilla bean paste (or extract), cinnamon, nutmeg, cloves, and salt.
Blend until smooth using an immersion blender or regular blender.
Cook uncovered over medium heat for an additional 30-45 minutes, stirring occasionally until thickened.
