  • 34 tbsp smooth peanut butter
  • 34 tbsp agave syrup (or maple syrup/powdered sugar)
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 100 grams 70% dark chocolate
  • 400g full-fat coconut milk

Instructions

  1. Blend the mousse ingredients: In a blender, combine silken tofu, peanut butter, agave syrup, vanilla extract, and salt. Blend until smooth and creamy. Adjust sweetness to your liking.
  2. Chill the mousse: Spoon the mixture into ramekins or jars and refrigerate while preparing the ganache.
  3. Make the ganache: Melt dark chocolate using a microwave or double boiler. Stir in the creamy part of coconut milk until well combined.
  4. Assemble: Pour ganache over chilled mousses and return to the fridge for about an hour to set.
