  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking

Instructions

  1. Press tofu between clean kitchen towels for 15 minutes to remove excess moisture.
  2. Cut pressed tofu into cubes and coat with cornstarch.
  3. Heat oil in a skillet over medium-high heat; add tofu in a single layer and cook until golden brown on each side.
  4. Remove tofu from the pan; sauté sliced peppers and onions until caramelized.
  5. Add garlic and ginger; stir for about 30 seconds.
  6. Mix in pineapple chunks; let caramelize for a few minutes.
  7. Combine soy sauce, rice vinegar, and maple syrup in a bowl; pour over veggies and add back crispy tofu. Stir gently until glazed.
