  • 1¼ cups whole milk
  • 1½ cups fresh or frozen raspberries
  • ½ cup sugar
  • 2 tbsp lemon juice
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup white chocolate, melted and cooled
  • 23 tbsp milk
  • Fresh raspberries
  • White chocolate curls or shavings
  • Mint leaves

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream softened butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, followed by vanilla extract and melted white chocolate.
  5. Alternately add the dry ingredients and milk until just combined.
  6. Divide batter among prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  7. For the raspberry filling, heat raspberries, sugar, and lemon juice until broken down; thicken with cornstarch slurry.
  8. Beat softened butter for frosting; gradually add powdered sugar, melted white chocolate, vanilla extract, and milk until desired consistency is reached.
  9. Assemble layers with frosting between them and frost the outside of the cake as well.
