  • 1 large egg (for cheesecake filling)
  • 1 teaspoon vanilla extract (for cheesecake filling)
  • 1 cup white chocolate chips
  • 1 cup Reese's peanut butter cups (chopped)

Instructions

  1. In a mixing bowl, cream together softened butter with granulated and brown sugars until fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract.
  2. In another bowl, whisk flour, baking soda, and salt. Gradually mix into the wet ingredients until combined. Chill dough for at least an hour.
  3. For the cheesecake filling, beat cream cheese until smooth; add sugar, egg, and vanilla extract until creamy.
  4. Preheat oven to 350°F (175°C). Scoop chilled dough into disks; place cheesecake filling in the center and seal it by folding the edges over.
  5. Bake cookies for 10–12 minutes until golden around edges but soft in the middle. Cool before drizzling melted white chocolate and topping with chopped Reese's.
